SMEs are known for their vulnerability to adapt to competition. Although they develop skills through their existence in terms of mastery of the craft, knowledge of the market and competition. This is their not enough, because in order to compete must exploit any opportunities that arise. Indeed, to do so you must be able to identify the opportunity and have the technological and human financial resources necessary for its operation. Among these methods, technology often confused with innovation. While technology is the result of a scientific development of an industrial machine, electronic or mechanical, or even more sophisticated nature, innovation is the ability to generate a new project it is operating a new market, a new production technique, a new form of organization, or whether it is a new product to manufacture. Through this contribution, we want to know if Oran SMEs milk and milk products sector are necessary to use the innovation. To answer this question, it is necessary to first clarify the concept of innovation in the SME Oran secondly whether they actually use the innovation. Finally try to understand where the Oran SME practices innovation in the pure sense of the term, which would be the main actor in the practice of innovation. Our approach consists in a field study with Oran SME sector and the milk derived from fewer than 20 employees. These are widespread in Oran and face an informal as well as major international groups established in Algeria competition. .
