الملخص
تهدف هذه الدراسة إلى عرض وتحليل التوجهات الدولية نحو تبني نظام أمن وسلامة الغذاء وفقا للمعيار الدولي ISO-22001، وتقييم حالة الصناعات الغذائية الجزائرية في ظل التحولات التي تعرفها هذه الصناعة وارتباطها بمختلف التغيرات الخاصة بالمستهلكين، الأسواق، والتكنولوجيا.... إلخ؛ ففي ظل تنامي مساعي الدول عبر العالم لضمان أمن وسلامة الغذاء عبر السلسلة الغذائية ككل يتزايد الوعي بأهمية جودة وسلامة الغذاء على مستوى الأفراد والحكومات وفقا مقاربة غذاء صحي ومستدام. وقد تبين من نتائج الدراسة أن توجه الصناعات الغذائية الجزائرية نحو اعتماد نظام ISO-22001 ضعيف جدا، وتم تفسير ذلك بعدم المعرفة الكاملة بالصناعة الغذائية وفقا للتقنيات المعتمدة في الاقتصاديات المتطورة، إلى جانب مجموعة المعوقات التي تواجه هذا النوع من الصناعات والتي تتطلب اهتماما أكبر من قبل الحكومة الجزائرية. This study aims to present and analyze the international trends towards the adoption of food safety and security system according to ISO-22001, and to evaluate Algerian food processing industries, under the transformations and the correlation with various changes to consumers, markets, and technology.... etc; in light of countries efforts growing via the world to guarantee food safety and security according food chain as whole, awareness growing about the importance of food quality and security on individuals and Governments in order to produce sustainable and healthy food. The results show that Algerian food industries reliance on ISO-22001 system is very weak. This has been explained by the lack of knowledge about food industry in according to the developed techniques on developed economies, in addition to some constraints that facing this type of industry that require more attention from Algerian Government.
