The aim of this present work is to study the physicochemical and biochemical quality of Nile Tilapia fish flesh, this species is considered as the most consumed fresh water fish farming in the world after Carp fish and it is cultured in Boukais, Bechar region, Southwest of Algeria. The physicochemical analyses in fish flesh relate to pH, humidity and ash content. However, biochemical analyses relate to the determination of protein and fat rates in fish flesh. Then, a statiscal analysis is done using Microsoft Excel 2016. One-way ANOVA is carried out to test for any significant difference. The results revealed that the Nile tilapia flesh contain moisture, protein, lipid, and ash content in the ranges of (76.02±0.01) (15.80±0.015 ) ,( 0.126±0.0057) 2,11±0,015, respectively. Results showed that Nile Tilapia fish flesh was nutritious, it contain significant variation in their nutritional, physical, and chemical properties.
