The use of date juice as substrate for lactic acid production was investigated. Lactobaci llus rhamnosus was examined as possible production. The batch cultures were realized to optimise culture medium and to study the nutritional requirement of the strain. These studies have allowed 10 describe the effects of carbon substrate. nitrogen substrate and salts. Date juice as carbon source was found to be satisfactory at a concentration of60g1J: As date juice alone is a poor nitrogen source and salts for Lactobacillus rhamnosus, different supplementations. such as yeast extract, MgS04• MnS04, FeS04. K]HPO", KH2P04 and tween 80 have been proposed. The production of lactic acid was increased with respeclto non supplemented date juice.Effectively with date juice supplemented a . satisfactory lactic acid concentration 43.5 gil was obtained compared to 45 gil with MRS
